Rather than buying tinned tomatoes or passata sauce it is really easy to make your own sometimes. This is then a great tasty tomato base for many dishes. I tend to cook with tinned tomatoes more in the winter, and then make tomato sauce in summer whenever I have visited the market place.
The local market places do some amazing deals on boxes of cherry tomatoes when they are in season. (the UK season is from June to October), but the supermarkets sell them all year round. (more expensive though!) If you have ever seen those deals in the market place and thought to yourself "thats good value, but what on earth am I going to do with that many cherry tomatoes?" then here is your answer!!
All you need is 4 ingredients!
800g cherry tomatoes
6 small cloves garlic, peeled and cut in half
4 tablespoons olive oil
1/2 tsp salt
Warm the olive oil in a large pan, or wok. (Important to also have a lid for pan or wok).
Put your whole cherry tomatoes into the oil (do not stir).
Sprinkle your garlic halves over the tomatoes,
Sprinkle the salt over
Put a lid on and leave to simmer for half an hour without stirring.This gives the tomatoes a really good taste.
After half an hour you can stir the tomatoes, then for the next 15 minutes stir regularly, and they should break down into a tomato sauce.
The garlic cloves should disintegrate easily into the sauce. Help them break down using a wooden spoon and disintegrating the garlic into the sauce.
The end result is really tasty, and useful for many dishes. You can then add other herbs and spices to make interesting variety of dishes.
