Ginger pecan chocolate slice
Updated: Feb 22, 2019

Ginger has such a wonderful flavour. The vibrant spice is one of my favourite Ingredients in desserts. I threw together some ingredients, and this was the result. Some delicious ginger pecan chocolate slices!
They freeze quite well if you don't want to eat them all at once. I sometimes freeze my desserts to stop me wolfing them all down. If they are in the fridge I find myself wanting one every time I walk past the fridge, but if I have to defrost them I eat them much less often.
Ingredients
10 dates (stones removed)
150g pecans (grind 50g, and 100g coarsely chopped)
100g ground almonds
2 tablespoon almond butter
2 tablespoons ginger
2 tablespoons coconut oil
40g raisins
4 tablespoons coconut butter
4 tablespoons maple syrup
4 tablespoons cacao powder
Directions
Put the dates, 50g pecans, ground almonds, almond butter, ginger, and coconut oil into the food processor and whizz until it is all mixed together.
Add the 100g of pecans, and 40g raisins and pulse until they are slightly chopped, to give them some crunch
Press into the base of a tin
Make the topping by melting the coconut butter and maple syrup together in a pan.Add the cacao powder and stir until mixed
Spread the chocolate mix on top, then refrigerate until set.
