Raw tomato garlic spaghetti courgetti

This raw lunch is so easy to whip up. It is as quick as making a sandwich! The only trouble is that the raw garlic could be a bit anti-social!! Garlic has antibacterial / antimicrobial qualities, and has also been found to be helpful for regulating blood pressure and cholesterol.


You will need a spiralizer for this recipe .


Ingredients


  • 1 courgette

  • 2 tomatoes

  • Handful of chopped basil

  • 2 cloves of garlic (small)

  • 1 lemon

  • 2 tablespoons extra virgin olive oil

  • Salt and pepper to taste

  • 1 tablespoon pinenuts

  • Handful of walnuts


Directions


  1. Spriralise the courgette

  2. In a bowl mix two tablespoons of freshly squeezed lemon juice and 2 tablespoons of extra virgin olive oil

  3. Finely chop two small cloves of garlic and add to the bowl

  4. Add two chopped tomatoes

  5. Chop the basil and sprinkle on top

  6. Mix this all together with the spiralized courgette

  7. Season with salt and pepper according to taste

  8. Lightly toast the pinenuts, and sprinkle on top

  9. Add walnuts if you desire
