Roasted butternut squash seeds

Don't ever throw away your butternut squash seeds! I can't believe how many times in my past I used to cook with squashes and threw away those seeds. What a waste of a really yummy healthy snack!

All you need to do is separate the seeds from the orange fleshy parts.

Spread them out on a baking tray. I usually put them onto baking paper to make washing up easier!

Then slosh some tamari (gluten free soy sauce) over the seeds.

Roast in an oven for 10 mins at 200C.

The seeds get a nice crispy, salty taste. Perfect for snacking on. For a soy free version you can use coconut aminos - this is a slightly sweeter and less salty version than the tamari.

I also sometimes make them sprinkled with smoked paprika, salt and balsamic vinegar.
