This is a good recipe for when you are feeling lazy, and want to sit down while your food cooks itself. Also good for guests so you can spend your time talking rather than slaving in the kitchen.
I was so pleased with this one. The sauce was delicious and had a good spicy zing. I like spicy flavoursome food, so if chillies are not your thing then just reduce the amount of chilli flakes.
4 pieces organic chicken thighs with skin on
Juice of one orange
Zest of one orange
2 cloves of garlic
1/2 teaspoon chilli flakes
1/4 teaspoon salt
1/2 teaspoon cumin seeds
1 tablespoon apple cider vinegar
1 tablespoon olive oil
1 tablespoon maple syrup
Marinate the chicken for 1 - 2 hours in all the above ingredients.
Roast in the oven with the marinade for 30 mins at 200 degrees C.
Serve with side dishes of your choice (lots of greens!)
